How to make a Blueberry Shortcake

Freshly baked biscuit topped with sweet flavor of homemade blueberry sauce and a dollop of fluffy whipcream making one of the perfect dessert for thr summer.

Instructions

Shortcakes:

Step 1

Preheat the oven to 200 degrees(C). Put the parchmet paper on to the baking sheet/baking mat.

Step 2

Put the cream,egg, vanilla and lemon zest into a large bowl and whisk them together.

Step 3

Add in flour, baking powder, suger, and salt into the large bowl.

Step 4

Cut the butter using a pastry bleander and put it into the mixture. Make sure that the coarse crumbs of the mixture is consistant.

Step 5

Pour the cream into the mixture and genetly stir it until it is moistened.

Step 6

Roll the dough on to the lightly floured surface, make sure it is 3/4 inch thick.

Step 7

Cut the dough using a 21/2 to 3-inch round cutter.

Step 8

Place the biscuit on to the prepared baking sheet. Bake up to 15 minutes until golden brown.

Step 9

Cool the biscuits for 5 minutes on the backing sheet, place the biscuits on the wire rack to cool it completely.



Blueberry Topper:

Step 10

Add 2 cups of blueberries, suger, and lemon juice in a medium saucepan

Step 11

Simmer the 2 ingredient,cook it in about 15 minutes on medium-low until the mixture thickened heat, stir the mixture regularly

Step 12

Add in 1 remaining cup of blueberries. Cool it for about 15 minutes



Whipped Cream (if using):

Step 13

Add heavy whipping cream and powered suger to the medium bowl

Step 14

Beat the mixture for about 3 to 4 minutes, until the medium peaks are form



Assembly:

Step 15

Cut the biscuits in half horizonally

Step 16

Place a spoon half of the blueberry compote on the bottom half of the biscuit

Step 17

Stack the top half of the biscuit on the top. Finsihing it, by topping with the remaining blueberry compote and the whipped cream
